Bang Bang Shrimp Recipe

Hello friends!! I haven't forgotten you. It's been a super busy few weeks. Lots of events happening, and I'm in charge of a division retreat at work.

It's been cray. But, I haven't let my healthy eating fall by the wayside! Here's a recipe to spice up your everyday dinner. I found this one on Pinterest, while looking for something different to do with shrimp. It's pretty easy and relatively quick. Two requirements for a weeknight in my book.


Paleo Bang Bang Shrimp

serves 2

Ingredients
Bang Bang Sauce

  • heaping 1/4c. Paleo mayonnaise
  •  1 tbsp sweet chili sauce (below)
  • 1 tbsp Sriracha
Sweet Chili Sauce
  • 1.5 tbsp white vinegar
  • 1 tbsp water
  • 1/2 clove garlic, minced
  • 1/4 tsp ginger
  • 1 tbsp honey
  • pinch of cayenne
  • 1/2 tsp chili powder
  • dash of red pepper flakes
  • dash of salt
Shrimp
  • 1/2 lb shrimp
  • 1 tbsp tapioca starch
  • coconut oil, for frying
  • 1 heaping c. coleslaw mix, with red cabbage
  • 1/4 c. cilantro
  • 2 green onions, minced
  • 1 tbsp olive oil
  • 1/2 tbsp white vinegar
  • 1 tsp honey
  • pinch of salt
Directions
1.   Make the sweet chili sauce: add all ingredients into sauce pan and bring to boil. Reduce to simmer until thickened. Let cool, then mix with mayo and Sriracha.


2.   In a large bowl, mix coleslaw mix, cilantro, onions, olive oil, vinegar and honey. Set aside.
3.   Heat a skillet over high heat, and melt the coconut oil for frying the shrimp. Toss the shrimp in a separate bowl with the tapioca starch. Add to skillet, and fry 2 minutes until golden. Flip, and cook another couple minutes until crispy.


4.   Add the Bang Bang sauce and cook through. 

 
5. Serve topped with the coleslaw mix, and a yummy side :) You could also make some Plantain Tortillas, and have tacos!
