I think I've always liked coconut. I was never a huge fan when I was younger, but I've always liked the taste. However, after going on the Whole 30, I am slightly obsessed. I love using coconut oil for just about any dish. It gives food such a nice nutty flavor.<br />

This takeout-style way of making chicken, is delicious. I love that you make the chicken brown and crispy first. It gives it a "fried" taste. It's definitely one of those trickster meals. Give it to someone, and they won't even know it's healthy!<br />

1. Salt and Pepper the chicken pieces. Preheat oven to 325 degrees.</div>

3. Heat the coconut oil in a skillet.</div>

4. Once skillet is hot, dip the chicken pieces in the tapioca flour, then the egg whites, and then place them in the hot oil. Be careful, as the oil tends to pop.</div>

5. Pan-fry the chicken until golden brown on all sides, but not cooked all the way through. I did about half of the pieces first, and then the other half so that I didn't crowd the pan.</div>

6. When chicken is done, place aside on a plate that is covered in a paper towel. Pat dry.</div>

7. Prepare a 9x13 baking dish with coconut oil, and place the chicken pieces in one layer.</div>

2. Prepare chicken breasts. Place the chicken in between two pieces of parchment paper and pound to 1/2 in thickness. Cut in half and season with the house blend. Set aside.</div>

3. Heat a high-sided skillet over medium-high heat, and add some oil to the pan... just enough to coat the bottom. Add seasoned chicken to skillet. When the chicken has been seared on both sides (note seared, not cooked), transfer to plate and set aside.</div>

4. Reduce temperature to medium and add a little more oil to the pan. Add the onions, garlic, salt, cinnamon and the Italian seasoning to the skillet. Cook until the onion is translucent, stirring often.</div>

5. Pour the tomatoes into the pan and stir together with onion mixture. When the sauce begins to bubble, add chicken. Cover and let simmer for 20 min.</div>

So, when I find a healthy version of anything Indian, I get really excited. I found this recipe on Pinterest. It's from <a href="http://myheartbeets.com/" target="_blank">My Heart Beets</a>. I served mine with some whole grain naan bread. You could also find a recipe for paleo naan and make that! The naan went in the oven at 400 degrees for about 10 min. It came out nice and crispy.<br />

Lately, I have really been loving fresh juice. I mean who doesn't? We have a couple juice shops close to us, and they are phenomenal. I love popping into them, and seeing what new ingredients and combinations they are using.<br />

However, going to these shops can get awfully pricey. Plus, J & I got a juicer for our wedding! It's a little bit more work, but I think it's definitely worth it. If you don't have a juicer, you can use a good blender as well. Just have a nice strainer on hand to strain the juice before you drink it.<br />

This particular recipe is great for winter. It's guaranteed to boost your immune system. Lots and lots of vitamins and antioxidants from the apples and carrots. Not to mention the numerous benefits of ginger including anti-inflammatory properties and lowering cholesterol.<br />

Stews are one of my favorite things to make when it's winter. Even more than chili. It's just so comforting and delicious. All the flavors meld together and stew into a wonderful dish. You could totally make some adjustments to cook this recipe in the slow cooker or even in a dutch oven.<br />

I swapped the beef for pork and then added a bit more broth to make it more of a stew. MMM MMM! 3. Pour in the bone broth, and seal the lid on the instant pot. Press the cancel button, and then the meat/stew button to start pressure cooking. This will automatically set the timer for 35 min. Make sure the pressure valve is closed.<br />

Cooking the ingredients in the Instant Pot leaves the kale tender and flavorful. You could also try cooking it a little longer in the Dutch oven as well, if you don't have a pressure cooker.<br />

You heard right! Sweet potato noodles :) When I was searching for a recipe to utilize my new spiralizer, I saw this beauty of a recipe and stopped dead in my tracks. I mean YUM right!?<br />

The original recipe is from <a href="http://pinchofyum.com/" target="_blank">Pinch of Yum.</a> And after looking at her site, I guarantee I'll be back for more recipes soon. They all look pretty delicious.<br />

The <a href="http://www.amazon.com/Paderno-World-Cuisine-A4982799-Tri-Blade/dp/B0007Y9WHQ/ref=sr_1_3?s=home-garden&ie=UTF8&qid=1452607707&sr=1-3&keywords=paderno+spiralizer" target="_blank">Paderno Spiralizer</a> was another awesome gift this Christmas. I've been making my zucchini noodles with a large box grater. It works okay, but this way is super easy. It cuts down on a lot of time and waste. You get a lot more noodles with the spiralizer. I also received the Inspiralized cookbook, so I'll be diving into that soon as well. The spiralizer took a couple tries to get used to, but once I got going, it was AWESOME! I'll be making everything into noodles from now on ;)<br />

2. Cook the chicken. I placed mine in the instant pot along with a 1/2 c. of water. Select "Poultry" and add 5 min to make shredding easier. Once the timer goes off, quick release the steam and shred the chicken.</div>

3. While the cashews are soaking and the chicken cooking, spiralize your potatoes.</div>

4. Drain the cashews and rinse them. Add them to a blender with salt, garlic and 3/4 c. water. Puree until smooth and creamy. This will make a lot of sauce. You can judge how much you would like to use in this recipe.</div>

5. Heat oil in a skillet over medium-high heat. Add the sweet potatoes and cook for 6-7 minutes, until they are tender-crisp. Remove from heat and add the spinach. Toss to combine and wilt the spinach leaves. </div>

It's great! You have a super go-getter attitude, and nothing will stop you. What makes this goal easier to attain and maintain (key word) is planning. Without a plan, you are more likely to get tired of what you are doing. In order to stick to a new diet or workout plan, you need consistency. Your goal should be more like a lifestyle. I know you've heard this over and over and over... But, when you get in the habit of meal planning, everything falls into place. It's routine. And routine leads to lifestyle. Before you know it, you feel so much better, you have lots of energy, and you're loving life!<br />

Here are my easy meal planning tips for a fantastic 2016!<br />

<b><i>1. Pick a day of the week to plan & stick to it! </i></b><br />
Make one day of the week your meal planning day. Get into the habit of planning out your meals on that day. Sit down and bust out a list of meals for the week. Write down a grocery list at the same time. Everything will be done, and you will be less likely to make up random meals. You will also avoid making the wrong choices, once you go grocery shopping.<br />
<b><br /></b>
<b><i>2. Create a pinterest board or another place to store recipes.</i></b><br />
When you have all of your favorite healthy recipes in one place, you will easily find recipes for the week. I have different boards for different recipes. For example: Healthy Food, Paleo Food, Desserts, Cheat Day Recipes, etc... You can go to the boards, and choose your recipes from there, if you don't feel like looking up new things to try.<br />
<br />
<b><i>3. Get input from your significant other or roommates.</i></b><br />
If you are planning meals for more than just yourself, use those around you for help. It may sound like a crazy tip, but sometimes you can get inspired by others. Have the other person choose a couple meals and you choose a couple meals. It makes the process more fun.<br />
<br />
<b><i>4. Plan for leftovers.</i></b><br />
A couple nights a week, plan to make meals that will leave you with leftovers. This could provide a meal on a busy weeknight, or leave you with simple lunches. Leftovers guarantee something in the fridge for those emergency times, where cooking is probably not an option. You'll be saving time and money!<br />

<b><i>5. Prep food as soon as you can.</i></b><br />
When necessary, prep food as soon as you get time. This will save you time during the week. When you buy veggies that will be used as a side or snack, chop them up when you have a couple minutes or even right when you get home from the store. It's so easy to just say forget it, after you get home from a super busy day. But with already prepped veggies or meat, you can immediately get to cooking the meal. Pre-chopped veggies also make for a quick and healthy snack.<br />

<b><i>6. Keep a meal planning journal.</i></b><br />
Write down all of your weekly meal planning in one place. Keep a record of everything you are eating, and keep track of what you like or don't like. Journaling your meals is helpful for a number of reasons. You will be able to see all of the different meals you have eaten and be able to reference this list for future meal planning. Also, this list will give you inspiration for other meals. Maybe, there was a side you really liked last week. Make a note! Add a heart or smiley face, and reference that journal for later meals!<br />

Another year has passed, and I must say, it's been a good one. I cannot believe we are moving on to 2016. Anywho, I hope you all had a great holiday. It can be rough coming back to work or school or just getting back to normal life after the holidays. I thought I would lighten things up with a new recipe to start off the new year. :)<br />

We had a great Christmas at the Kinder house. We traveled back to Indiana for a couple long weekends with family. We have a nice schedule worked out for Christmas Eve and Christmas that leaves our day stress-free, and we get to see most of our family. We are truly #blessed. I received many amazing gifts this year. My family really knows me. The best gifts that I always get are the "surprises." Every year since I was little, I make my list, but I always ask for surprises! The stuff that I don't even know I want.<br />

This year, J did really well. He got me something that I really didn't even know I needed/wanted. He got me an <a href="http://instantpot.com/" target="_blank">Instant Pot</a>! Have you heard of these things!? I mean I think I had heard maybe something here or there, but they are all the rage in the Paleo community apparently. They are truly one pot wonders. The Instant Pot is a pressure cooker, rice cooker, yogurt maker, slow cooker, and even more. I was so pumped about this gift that I have already used it about 5 times in less than a week.<br />

I was particularly excited to break this baby out on New Years Day. Another tradition we have, is eating corned beef and cabbage for good luck on NYD. So I broke out the (FREAKING AMAZING) Instant Pot, and made the recipe below. Guess what? Delicious. The flavors that came through were just great, and in basically no time, with little work.<br />

<li>2 c. water</li>
<li>1 small onion, chopped</li>

<li>1/2 tsp allspice</li>
<li>1 lb small red potatoes, halved</li>

2. Once cooking is done, turn the cooker off, and naturally release the steam for 10 min. After that time, quick-release the rest of the steam and remove the meat. Cut as desired. Cover with aluminum foil to keep warm while vegetables cook.</div>

3. Carefully place potatoes and cabbage into the liquid of the pressure cooker. Lock the lid and press "manual" again. Set time for 10 min.</div>

It was, as always, so much fun and so delicious. It's nice to celebrate with friends. I had a hard time at first, when we moved to Cincinnati. It wasn't that far from home, yet I felt that it was impossible to meet new people. Luckily, that didn't last too long. I made instant friends when I started working at Caribou Coffee that year, and I added to that as I got to know J's colleagues.<br />
<br />
We ate many glorious dishes at Friendsgiving. I made the turkey, using the Rosemary Apple recipe from my <a href="http://fitfoodfoodie.blogspot.com/2015/11/thanksgiving-recipe-roundup.html#more" target="_blank">Thanksgiving Roundup</a>. Oh man. Yeah you guys have to try that one. There was salad, stuffing, mashed potatoes, pies...just about everything you can imagine. Mmm Mmm.<br />

Anywho... onto the recipe. I made this squash last week. It was a little chilly outside, and this dish definitely hit the spot. I don't think I've ever made anything with acorn squash. It smells a bit like pumpkin when you cut it open, but it's a little sweeter in taste. Man was it good. I loved the breakfast flavors that accompanied. <li>1 acorn squash, cut in half, seeds removed</li>
<li>1/2 lb ground turkey</li>
<li>1/2 yellow onion, diced</li>
<li>1 clove of garlic, minced</li>
<li>1 tsp sage</li>
<li>1 tsp parsley</li>
<li>1/2 tsp thyme</li>
<li>1/4 tsp celery salt</li>
<li>Salt & Pepper to taste</li>
<li>2 eggs (I used medium eggs)</li>

1. Preheat the oven to 375 F.<br />

2. Place the squash halves cut side down on a baking sheet sprayed with coconut oil. Roast squash for about 25-30 min, or until soft.<br />

3. While squash is cooking, add some ghee to a pan and saute onions and garlic over medium-high heat. Once the onion starts to turn translucent, add turkey and cook until no longer pink. Add spices towards the end of cooking the turkey.<br />

4. Once squash is done cooking, remove from the oven & let cool for a bit. Remove the inside of the squash, leaving the skin in tact.<br />

5. Add the squash to the meat mixture & cook for a couple minutes (2-3 min)<br />

6. Scoop the meat and squash mixture back into the squash skin. Hollow out a section, and crack the eggs into the squash.<br />

Man oh man do I love pork. Especially bone-in pork chops from Whole Foods. I don't know what it is about WF, but they have the best pork! Trust me on this one. This recipe had wonderful, juicy flavor. As I mentioned in the post, I think it would be absolutely glorious cooked on the grill.<br />

<span style="font-size: large;"><b><i>Beauty:</i></b></span> A few weeks ago I won a giveaway on Instagram (thanks to the lovely Shannon Rapovy ;)) for the <a href="http://www.sephora.com/shimmering-skin-perfector-pressed-champagne-glow-palette-featuring-champagne-pop-jaclyn-hill-P401473" target="_blank">Shimmering Skin Perfector Pressed Champagne Glow Palette</a>. What a mouthful. Let me tell you... it's GORGEOUS. Champagne Pop is my favorite highlighter. I've been obsessively using it, since it came out this summer. But, I think Blushed Copper in this palette may take the cake. I use it as an eye shadow, and it's glorious. For some reason, I thought it already came out. However, it says "Coming Soon" on Sephora.com. Anyway, put that sucker on your Love List or your Xmas list, because you need it in your life!<br />

<span style="font-size: large;"><i><b>Entertainment:</b></i></span> Last Sunday, my friends, my husband and I sat on the couch and literally didn't move all day. I don't think I've ever done this in my life (at least not since college). We watched the entire first season of <a href="http://abc.go.com/shows/scandal" target="_blank">Scandal</a>, which my friends had never seen. Jeremy and I have watched since the first season came out, and I am more in love with this show than ever before. It's just so darn good. That, and HTGAWM are the best shows on television right now. (Damn you Shonda Rhimes!!) I'm just going to put that out there. Watch it people! It's on Netflix right now, and totally worth the subscription fee alone.<br />

But this week, she introduced me to <a href="http://www.bradsdeals.com/" target="_blank">Brad's Deals</a>. This site is updated daily, and contains lots and lots of wonderful deals. I foud 2 for $40 college team hoodies and $14.99 sweaters yesterday. Ahead of my Christmas shopping!? That literally never happens!<br />

<span style="font-size: large;"><b><i>Miscellaneous:</i></b></span> Earlier this week, I posted my <a href="http://fitfoodfoodie.blogspot.com/2015/11/thanksgiving-recipe-roundup.html" target="_blank">Thanksgiving Roundup</a> of recipes for a healthier holiday. Yesterday, I recieved my email from Nom Nom Paleo with her <a href="https://www.dropbox.com/s/514fnd60ry5irr1/Ultimate%20Nomtastic%20Thanksgiving.pdf?dl=0" target="_blank">Ultimate Nomtastic Paleo Thanksgiving Survival Guide</a>! Today's recipe is one that would be great on the grill. If I would've thought about it before hand, I would've had the hubs fire it up to cook up these pork chops. Have I mentioned I love pork? I found this recipe while searching pinterest, of course, and could not wait to try. It's super simple, with minimal ingredients. Who can beat that on a weeknight!? This pork chop deliciousness comes from <a href="http://www.jocooks.com/" target="_blank">Jo Cooks</a>. It looks like some of her recipes are Paleo, and all of the recipes on her site look DELICIOUS. Ingredients<br />
<br />
<ul>
<li>2 bone-in pork chops</li>
<li>1 tbsp coconut oil</li>
<li>2 tbsp coconut aminos</li>
<li>1 tbsp honey</li>
<li>2 cloves of garlic, minced</li>
<li>1/2 tsp ginger, minced (I used paste)</li>
<li>1 tsp sriracha</li>
<li>1/2 tsp sesame oil (optional)</li>
<li>salt and pepper to taste</li>
</ul>

Directions</div>

<ol>
<li>Preheat oven to 400 degrees.</li>
<li>In a small bowl, whisk together coconut aminos, honey, garlic, ginger, siracha and sesame oil (if using) Salt and pepper pork chops. then saturate in marinade. Let sit for 20 min in the fridge.</li>
<li>Heat coconut oil in a skillet over medium high heat. Add pork chops and let cook for about 5 min on one side. Flip to other side and add extra marinade. Let cook for 3-4 min on second side.</li>
<li>If using an oven-safe skillet, transfer the skillet to the oven. If not, transfer the pork chops to an oiled baking sheet. Cook pork chops for about 10 min in the oven, or until the pork reaches an internal temperature of about 170 F.</li>
<li>Serve with side of veggies or side of choice!</li>

<b><span style="font-size: large;"><i>Food:</i></span></b> My favorite food this week was Paleo Chicken Alfredo prepared by my husband! It was a variation of <a href="http://thedomesticman.com/2012/05/10/gluten-free-chicken-fettuccine-alfredo/" target="_blank">this one </a>from The Domestic Man. Instead of grain-free pasta, he used spaghetti squash. He also doesn't like mushrooms or broccoli, so he omitted those. However, he did use Nom Nom Paleo's Magic Mushroom Powder. I've talked about it before. It's a great spice to add to any meal. It adds incredible flavor. This dinner was delicious. Check it out!<br />
<br />
<span style="font-size: large;"><b><i>Beauty:</i></b></span> My favorite beauty item this week has been The Balm Cosmetics Long-Lasting Lipstick <a href="http://www.thebalm.com/cosmetics/meet-matte-hughes.html" target="_blank">Meet Matt(e) Hughes</a> in the color Adoring. This matte lip color is my absolute favorite that I have tried so far. It's not drying like a lot of lip stains. And the colors are gorgeous. I also have the color Committed. I got so many compliments while wearing Adoring. It's such a fun dark color for fall.<br />
<br />
<span style="font-size: large;"><i><b>Entertainment: </b></i></span>Football. When it's fall, football is my favorite form of entertainment. Gosh I really love watching it, and getting into the games. I'm a major <a href="http://www.colts.com/" target="_blank">Colts</a> fan. Even though we aren't doing the absolute best this year, I still love watching the games, and cheering my team to victory. I'm an Indiana girl. #BleedBlue I'm also keeping a close eye on the <a href="http://www.bengals.com/" target="_blank">Bengals</a>. I am currently living in Cincinnati. They are 8-0, and the energy in this city is contagious. Keep it up Cincy! #WhoDey<br />

<b><i><span style="font-size: large;">Website:</span></i></b> Nerd Alert! I just found <a href="http://ravelry.com/">Ravelry.com</a>. Every fall I get really into knitting and crafts, because I love making gifts to give for Christmas. This site has a ton of inspiration, patterns, chat forums, etc... to feed my knitting addiction. I'm not the best at knitting (aka a beginner, and that's generous lol), but I feel like this site will help me to the next level. The second website that<br />
<br />
<span style="font-size: large;"><b><i>Miscellaneous:</i></b></span> My miscellaneous favorite this week is the new Ellie Goulding album, <a href="https://itunes.apple.com/us/album/delirium-deluxe/id1040677406" target="_blank">Delirium</a>. I bought it on iTunes first thing this morning. Ahhh I mean it is so good. This woman can do no wrong in my eyes. I attended her concert a little over a year ago, and it was one of the best I'd been to. She is amazing live. Such a bad ass female. Delirium just came out today. Go listen now on Spotify!<br />

The weather has been so nice recently. A little rain here and there, but for the most part, it's been gorgeous. Beautiful fall days are just the best. The leaves are so pretty, and everyone is in a good mood.<br />

Fall is also a WONDERFUL time for food. Oh man...All of the warm, delicious recipes pop up during this time of year. Pumpkin everything. I'm one of those pumpkin freaks. Yep. Not at all afraid to admit it. I love cooking with pumpkin. It's so creamy, and it brings out some delicious flavors in your food. There's also sweet potatoes, squash, apples, etc... Yum!<br />

I've been playing around with my pumpkin turkey chili recipe for some time, and I think I've finally got it down. The fire-roasted tomatoes really compliment the pumpkin well in this recipe. I also love adding cinnamon. It's such a great flavor. This chili is PERFECT for leftovers. Make up a huge batch, and eat this throughout the week :) It's also a one-pot meal, and super fast to make!<br />

<li>1 large bell pepper, diced</li>

<li>1 lb ground turkey (or ground meat of choice)</li>
<li>1 tbsp paprika (could also use smoked paprika for stronger flavor)</li>
<li>1 tbsp chili powder</li>
<li>1 tsp cinnamon</li>
<li>1 tsp salt</li>
<li>2 cans of fire-roasted diced tomatoes</li>
<li>1 c. bone broth</li>
<li>1 15oz can of pumpkin puree (not pumpkin pie filling)</li>

1. Prepare veggies, while heating coconut oil over medium high heat in the dutch oven. You could also use a large pot here, but I feel like the dutch oven is the best pot to use for chili.</div>

3. Add the bell pepper and jalapeno, and coninue to cook. Let this go for a couple minutes, until the bell pepper is starting to look a little soft.<br />

4. Add the turkey to the pot, and cook until no longer pink.<br />

5. Next, add the spices. Stir and cook for about a minute to let the meat and veggies soak up the flavor. Then add the tomatoes and broth. Let simmer for 5 min.<br />

6. Last, add the pumpkin to the chili. Stir and turn the burner temp to low. Cover and let the pot simmer for 10 min. During this time, do not remove the lid or stir the chili. Let it all soak up the flavor undisturbed.<br />

I found this one on Pinterest, while looking for something different to do with shrimp. It's pretty easy and relatively quick. Two requirements for a weeknight in my book.<br />

1. Make the sweet chili sauce: add all ingredients into sauce pan and bring to boil. Reduce to simmer until thickened. Let cool, then mix with mayo and Sriracha.</div>

2. In a large bowl, mix coleslaw mix, cilantro, onions, olive oil, vinegar and honey. Set aside.</div>

3. Heat a skillet over high heat, and melt the coconut oil for frying the shrimp. Toss the shrimp in a separate bowl with the tapioca starch. Add to skillet, and fry 2 minutes until golden. Flip, and cook another couple minutes until crispy.</div>

I usually try to make enough food at dinner, so that I have plenty to take for lunch at least once, if not twice. I don't always have enough, but when I do, I make sure that it's stored correctly. There's nothing worse than thinking you have a yummy leftover lunch, and then opening the fridge to find fuzzy green mold all over. When stored properly, your leftovers should last around 5 days. This will leave you with ready-to-go lunch options, as well as emergency dinners.<br />

Some of you have said you love leftovers too, and some have said you don't. For those of you that don't like leftovers, you may not be storing your food correctly. If that's the case, you may be left with a weird texture, such as too hard or too soggy foods.<br />

This article will hopefully give you some tips to storing your leftovers.<br />

The large, deep plastic containers are nice for holding a lot at one time, but are not great for storing piping hot food. When you store the hot, cooked food in a thinner layer, it's allowed to cool quicker. This ensures your food will be kept at a safe temperature.<br />

Modern refrigerators can handle heat, if you're worried about the dish not cooling quick enough. Don't worry about letting your food cool. You want to get the leftovers in containers and into the fridge, before 2 hours is up. It's okay to leave it out while you're eating.</div>

I need to follow this tip more often. There will be food in my fridge that I completely forget is there. When I go to pull it out, I have no idea what it is or how long it's been there. If you label your leftovers, there will be no question.</div>

Even though having a lot of leftovers are nice, you don't want to over-crowd the area. You could be putting yourself in danger of food poisoning. Cold air needs to circulate in order to keep the food at a safe temperature. If necessary, freeze the meals you cannot fit into the fridge.</div>

Even food that is properly stored may go bad before 5 days. Make sure you really look over your food, and smell it to make sure it doesn't smell funky.</div>

I don't get home until after 7:30, so hubby cooks the meals on these days. It's so nice to come home, shower, and have a hot meal ready for me after my workout.<br />

I've started this week with a not-so-nice head cold and a cough. So when Jeremy said he was cooking this Potato & Kale Hash from <a href="http://thedomesticman.com/" target="_blank">The Domestic Man</a>, I knew it would hit the spot. It definitely did not disappoint. This simple hash has SO much flavor. My tummy was very happy after this meal.<br />

Monday was Labor Day, and that was actually pretty relaxing in the morning. However, then we had to run errands and do all of the weekend stuff that we had neglected to do earlier. 2. Heat skillet over medium-high heat and melt oil. Once oil is hot, add turkey, and cook until no longer pink.</div>

3. When meat is almost completely cooked, add the onion and garlic. Cook for about 2 minutes, then add the spices. Cook until fragrant (about 1 min)</div>

4. Add the rest of the veggies to the skillet. Place lid over the skillet to steam vegetables. Turn heat down to medium. Cook for 5 min or so, then remove the lid and cook for 2 min to let some of the liquid evaporate.</div>

I thought that, because we had spent (a little too much) money over the weekend, it would be good to make something at home for lunch.<br />

I had bought all of the ingredients, and some I had at home, for this DIY salad bar towards the end of the week. Everything was basically ready. I just had to throw the chicken in the crockpot in the morning, and pull everything out of the fridge when we were ready to eat! Simple and easy peasy.<br />

1. To cook the chicken, I put it in a crockpot and covered the chicken in broth. I turned the pot to high for about 3 hours. Once the chicken is cooked, remove and shred. Let the chicken cool.</div>

3. Prepare the dressing: Whisk all ingredients until mixed well. Store in a jar or tuperware container in the fridge.</div>

Calm down, this recipe doesn't contain actual garbage ;) I actually stole this term from <a href="http://nomnompaleo.com/" target="_blank">Nom Nom Paleo</a>. Basically, it means I threw a bunch of left over stuff together to make a meal. Michelle from NNP uses this idea for stir-fries, but I thought that the same rule could apply to just about anything.<br />

We ate on it for a couple days, but then it needed a little sprucing up. Most of the ingredients I used in this recipe I had on hand, but I did have to buy a couple things. 1 tsp crushed red pepper (more or less to taste)<br />

1 (14.5oz can) diced tomatoes<br />

Of course I eat sweet potatoes year round, but they are especially yummy, when they are seasonal. This recipe was something I threw together during my Whole30. It's satisfying, and super easy to make, with any ingredients you like. Throw your favorite meat and green on there with some spices, and you've got yourself a meal!<br />

1. Cook your sweet potato. I have a potato bag that makes this meal incredibly quick. But if you don't have one of those: Preheat your oven to 425. Line a baking sheet with foil and poke holes in the potato with a fork. Spray the baking sheet with cooking spray and place the potatoes. Cook for 30 minutes, turn and cook 30 more minutes.</div>

3. Cook the onions over medium high heat, until translucent. Add the pork, and cook until no longer pink. When the meat is almost done, add the spices and cook a couple more minutes until fragrant (2-3).</div>

4. Add your chopped kale and a tiny bit of water to the meat mixture. Put a lid over the pan to steam the kale, until wilted.</div>

5. Once your kale mixture is cooked, turn off the heat and keep the lid on to keep it hot until your potatoes are done.</div>

6. Once the potatoes are done. Carefully take them off of the baking sheet and onto your plate. Slice down the middle length-wise. Mash up some of the middle and add some butter or ghee if you would like.</div>

7. Top the potatoes with the meat mixture and enjoy immediately!</div>

Group fit is so incredibly fun for me to teach, and I have a great group this year!<br />

With new group fit classes, comes late dinners. My schedule this year is a little later than I've had in the past. It's in kind of an awkward time, where I can come home from work, but I basically have time to change, turn around and leave. So, it's nice to have some crockpot meals ready to go. When I get home from teaching, dinner is ready. I know my muscles are grateful!<br />

This curry had the most amazing flavor. The base of this recipe is from a wonderful paleo recipe blog called <a href="http://www.rubiesandradishes.com/" target="_blank">Rubies & Radishes</a>. There are some really awesome things on this site. AND, I found that, like most crockpot meals, the leftovers from this meal were even better than the original meal. All of the spices seep into the chicken and veggies, and you're left with a great lunch the next day.<br />

2. Spray the inside of your slow-cooker. Add the coconut milk, curry paste, curry powder, salt and pepper. Stir until mixed well.</div>
