Busy Weeknight Dinner Recipe : Ground Turkey & Veggie Skillet

This week has been a little crazy. Monday was Labor Day, and that was actually pretty relaxing in the morning. However, then we had to run errands and do all of the weekend stuff that we had neglected to do earlier. Over the past couple days, I've been running errands, teaching, and packing and prepping for this weekend (when I haven't been working).

This weekend, one of my VERY best friends is getting married! I have known her for about 8 years now, and I could not be happier for her. I'm a bridesmaid in the wedding, so it's extra special that I can stand by her. :) Ahh I just can't wait.

Anywho, J and I are taking the day off tomorrow to head to Indianapolis, so our nights have been pretty packed. I wanted a quick weeknight meal, that could be made in less than 30 min. This one came in around 15! Perfect.



Ground Turkey & Veggie Skillet

Ingredients:

  • 1/2 lb lean ground turkey
  • 2 tbsp coconut oil
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • salt and pepper to taste
  • 2 cloves garlic, minced
  • 1/2 med. onion, chopped
  • 1 c. summer squash and/or zucchini, chopped
  • 1 heaping c. fresh green beans, ends trimmed
  • 1 c. cherry tomatoes, halved
  • 1/2 c. fire roasted tomatoes
  • Optional: 1/4 c. part skim shredded mozzarella  
Directions:
1.   Chop and prepare veggies.



2.   Heat skillet over medium-high heat and melt oil. Once oil is hot, add turkey, and cook until no longer pink.
3.   When meat is almost completely cooked, add the onion and garlic. Cook for about 2 minutes, then add the spices. Cook until fragrant (about 1 min)
4.   Add the rest of the veggies to the skillet. Place lid over the skillet to steam vegetables. Turn heat down to medium. Cook for 5 min or so, then remove the lid and cook for 2 min to let some of the liquid evaporate.


5.   Remove from heat and add cheese, if using. 
6.   Serve and enjoy!
